Each rack of OP Ribs is cut from 100% Free Range Grass Fed cattle. On its own - these would be amazing; with the benefit of dry ageing adding a new, ever-changing flavour profile, it will be phenomenal.

We highly recommend getting these sliced in steaks so our talented butchers can use their precision to cut off any trim that needs to be removed to create perfect steaks ready for your barbecue.

Dry ageing adds flavour (think nutty, buttery) texture and tenderness to the final product that you will not be able to achieve in any other way. During the aging process enzymes break down the connective tissue between the muscle fibre, tenderizing the meat. At the same time, the cut of meat loses moisture, concentrating the flavour.

These have already been placed into in our fully equipped dry age room at our Eagle Farm store and have been aged for 30 days.


    This product is sold as a whole product that has been dry aged by us in our dry ageing facility. The weight advertised is the weight when the piece has been placed in the dry age room at the start of the 40 days. By purchasing whole, you are able to secure a premium product at an unbeatable price - however you are also exposed to the loss of weight that can occur due to ageing and trimming of the final product (~30%).

      Our butchers love to help! If you would like to leave some extra packing instructions in your order notes, please do! For example: “Please pack mince and chicken breast in 500g bags”.

      Do you want the whole rump cap separated from a whole rump for a roast? No problem! Let us know in the order instructions. As long as its something our butchers can do safely, we'll be happy to oblige and let you know if there are any issues.

      Our store pickup days vary from store to store, however in general are Tuesdays, Wednesdays, Fridays and Saturdays.

      Pickups are available from 10am at most stores, 11am from our Oxenford, store 12pm from our Ashmore store.

      Once you select pick-up or delivery and enter the checkout, you will find the entry box on the right-hand side of our shipping details and choose your date pages (pages 1 and 2 of the checkout).

      Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

      If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

      Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.
