Rump cap is the cut that rests on top of the rump. Because it’s not an exerted muscle, rump cap is tender with a layer of fat that flavours and moistens the meat as it cooks. Rump cap makes a tender roast, or you can slice it against the grain for petite steaks and tender stir-fry strips.

This Rump Cap is 120 day Grain Fed Angus, minimum 75% Angus genetics.

Do you want the whole rump cap separated from a whole rump for a roast? No problem! Let us know in the order instructions. As long as its something our butchers can do safely, we'll be happy to oblige and let you know if there are any issues.

Once you select pick-up or delivery and enter the checkout, you will find the entry box on the right-hand side of our shipping details and choose your date pages (pages 1 and 2 of the checkout).

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).


If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

Excellent rump cap

I bought two of these and cooked the first as steaks and the second as a roast, adding Barbecue Mafia Steakout rub. I reverse seared the steaks starting in the pellet smoker until they were 125f internally and then seared them on a hot pan for 2 minutes either side. I cooked the roast in the pellet smoker to 135f internally. Both went down very well with the family, especially the roast which was incredibly tender and tasty.
