Oyster blade has a two sides of meat separated by a thin line of "gristle". This gristle is not like usual gristle, when slow cooked it renders down perfectly and turns into a sort of jelly like texture which delicious to eat.

These are perfect for low and slow BBQ, slow cooked (recommended) or sous vide! These have also been known to create nice steaks when sliced up, but are better known for their slow cooking capabilities, so if you decide to cook these as steaks keep in mind it will not be the most tender and gristle free steak.
