Creamy Chicken Thigh Pasta

Ingredients

  • 500g chicken thigh fillets (cut into bite-sized pieces)

  • 400g pasta (penne, fettuccine or your choice)

  • 2 tbsp olive oil

  • 3 cloves garlic (minced)

  • 1 small brown onion (finely diced)

  • 1 cup thickened cream

  • ½ cup chicken stock

  • ¾ cup grated parmesan cheese

  • 1 tsp Italian herbs (or mixed herbs)

  • Salt & pepper (to taste)

  • 1 cup baby spinach (optional but recommended)

  • Optional: pinch of chilli flakes for a bit of kick

Directions

  1. Bring a large pot of salted water to the boil and cook pasta until al dente. Reserve ½ cup of pasta water, then drain.

  2. Heat olive oil in a large pan over medium-high heat. Season chicken with salt and pepper, then cook for 5–6 minutes until golden and cooked through. Remove and set aside.

  3. In the same pan, add onion and cook for 2–3 minutes until softened. Add garlic and cook for another 30 seconds until fragrant.

  4. Pour in chicken stock and let it simmer for 2 minutes. Add cream, parmesan, and herbs. Stir and let it gently simmer until slightly thickened (3–4 minutes).

  5. Return the chicken to the pan. Add cooked pasta and toss everything together. If needed, loosen with a splash of reserved pasta water.

  6. Stir through spinach until wilted. Taste and adjust seasoning.
