Enjoy a premium cut crafted for the Australian palate with the 1892 Rump Cap. Sourced from Gippsland cattle and developed specifically for the Australian market, the 1892 Beef program focuses on delivering the flavour, tenderness, and consistency local steak lovers expect.

Raised on lush Gippsland pastures and finished on grain to enhance marbling, this rump cap (also known as picanha) offers the best of both worlds — rich beef flavour from grass-fed cattle, paired with the tenderness and juiciness that grain finishing provides. The signature fat cap naturally bastes the meat as it cooks, creating incredible flavour whether roasted whole, grilled over charcoal, or sliced into steaks.

The 1892 program was designed with Australian consumers in mind, ensuring the cut size, marbling, and eating quality match what our local market loves most in a great steak.

Perfect for Brazilian-style churrasco, BBQ roasting, or reverse-searing, the rump cap delivers bold flavour and a juicy texture every time.

Butcher’s Tip: Lightly score the fat cap before seasoning and cook fat-side down first to help render the fat and create a beautifully crisp crust.

Key Features:

• Sourced from Gippsland cattle raised on quality Australian pastures

Bring home a premium BBQ favourite with 1892 Rump Cap — built for the way Australians love their steak.

1892 Southern Premium Beef is a brand developed specifically for the Australian market. With years of experience supplying the domestic trade, we understand that Australians have their own expectations when it comes to the perfect steak.

That’s why this program is tailored to meet local specifications — not export market requirements. Sourced from Gippsland cattle, grass-fed and grain-finished to deliver consistent marbling, tenderness, and that premium flavour Australians expect.

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

By selecting "Yes" for “Keep the offcuts?” you’ll receive the smaller end pieces and trimmings that come from slicing your bulk beef — the same beef, just in uneven shapes and sizes, perfect for tallow or a super special treat for your furry friends.
