Known for its tenderness and full-bodied flavour, the Bass Strait Grass Fed Oyster Blade is a hidden gem of the butcher's case. Cut from the shoulder, this versatile steak is perfect for slow cooking or grilling when handled right — thanks to its rich marbling and unique connective grain.

Raised on the coastal pastures of Bass Strait and part of the Greenham Never Ever program, this beef is 100% grass fed, free from antibiotics, added hormones, and grain. The Natural State Hanging Method enhances its tenderness naturally.

It’s ideal for braises, low-temp sous vide, or sliced thin after grilling hot and fast.

Pro tip: For grilling, slice with the grain first, then against the grain after cooking to unlock maximum tenderness.

Why choose this Oyster Blade:

  • Affordable, underrated cut with rich flavour

  • 100% grass fed and ethically raised

  • Free from hormones, antibiotics, and GMOs

  • Perfect for grilling, braising, or sous vide

  • Enhanced tenderness from natural hanging process

Add to your cart today and enjoy one of the butcher’s best-kept secrets.

Bass Strait and its coastlines fall at the latitude where drenching rain, warming sun and salt-water winds combine to create climatic perfection for growing tender grass-fed beef.

Bass Strait Beef employs a 'Natural State Hanging Method' in which all carcases are hung in a way that follows the natural anatomical position of cattle.

The cattle are peacefully raised on natural rye grasses and clover without the need of antibiotics or hormone growth promotants, as they are a part of the Never Ever Program.

Super Butcher

Hi Kim,
thank you for your honest review. We're sorry to hear the oyster blade was too gristly for your liking—it’s disappointing when a cut doesn’t meet expectations. Slow cooking is a great idea and can help break down the connective tissue, but we understand your decision not to repurchase. Your feedback has been passed on to our supplier as we continue working to ensure consistent quality. If there’s anything we can do to assist, feel free to contact us at support@superbutcher.com.au. We appreciate your support.

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

By selecting "Yes" for “Keep the offcuts?” you’ll receive the smaller end pieces and trimmings that come from slicing your bulk beef — the same beef, just in uneven shapes and sizes, perfect for tallow or a super special treat for your furry friends.
