Affectionately known as Osso Bucco, a beef shank is a cut of beef taken from the leg of the animal. It is known for being tough and lean, with a lot of connective tissue. Due to its toughness, beef shank is best suited for slow cooking methods like braising or stewing, which help break down the connective tissue and render the meat tender and flavourful.

This cut is often used in dishes like beef stew and soups. It has a rich, beefy flavour that becomes more pronounced the longer it cooks.

All of our online products are vacuum sealed except for our fresh Sausages, Rissoles and Burgers, Pastries and crumbed products. Eg: Schnitzels, Chicken Kievs, Nuggets.

We offer free GPS tracked & refrigerated local delivery on orders over $200, or $19 under. Check if you’re eligible for delivery by opening the cart and using the postcode checker.

We also offer free pickup at any Super Butcher store from Tuesday to Saturday.

Our online delivery orders are packed neatly in a thick cardboard box with an insulated liner, complete with plenty of gel ice packs - all of which are soft plastics recyclable, and delivered fresh via refrigerated couriers. This box can keep your order cool for up to 4 hours after delivery.

Not just for osso bucco

One of my go tos for winter. While we call the cut osso bucco in Australia, that’s technically the dishes name. if you’re looking for more recipes search for beef shank. Works great for things such as beef bourginon, pie filling and Mexican barbacoa (which I used it for). Flavour was fantastic, the marrow dissolves right into the sauce and just enriches it with so much flavour, no need to get fancy stock this cut has got it built in! Picture below of the remaining sauce from cooking. The best flavour bomb out there (add it to rice or beans to really step up your sides)

Once you select pick-up or delivery and enter the checkout, you will find the entry box on the right-hand side of our shipping details and choose your date pages (pages 1 and 2 of the checkout).

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).


If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

By selecting "Yes" for “Keep the offcuts?” you’ll receive the smaller end pieces and trimmings that come from slicing your bulk beef — the same beef, just in uneven shapes and sizes, perfect for tallow or a super special treat for your furry friends.
