With a delicate buttery texture and light marbling throughout, this eye fillet offers exceptional tenderness while maintaining the clean, natural flavour grass-fed beef is known for.

Produced by Hardwick Beef, this beef is raised on open grass pastures with no antibiotics and no added hormones, ever. Hardwick’s commitment to sustainable farming, animal welfare and traceability ensures every cut is responsibly produced with a focus on both environmental care and premium eating quality.

The MB2+ marbling provides a beautiful balance of tenderness and flavour without overpowering the natural character of the beef. Perfect for pan-searing, grilling or sous vide cooking, this cut shines with simple preparation.

Butcher’s tip: Cook quickly over high heat to medium-rare and rest thoroughly before serving to preserve the eye fillet’s delicate texture and juiciness.

Hardwick Beef is committed to producing premium-quality Australian beef the natural way — cattle raised on grass, with no antibiotics and no added hormones, ever. Built on a foundation of sustainability, animal welfare and transparency, Hardwick Beef represents a return to traditional farming methods that prioritise both the health of the land and the quality of the beef.

By continually rotating cattle through fresh pastures, Hardwick promotes healthier animals, stronger soils and more sustainable farming practices. This grass-based system allows cattle to graze naturally when grasses are at their nutritional peak, resulting in beef that is clean, flavourful and naturally rich in quality.

Hardwick Beef believes consumers deserve to know where their food comes from, with a strong focus on traceability and ethical farming from birth onward. Their commitment to humane livestock handling not only supports animal welfare but also contributes directly to superior eating quality.

Working alongside more than 75 family farms, Hardwick Beef supports local farming communities while protecting the environment for future generations. The result is premium grass-fed beef that’s sustainable, responsibly raised and unmistakably natural.

Hardwick Beef Principles:
- 100% grass raised beef
- No antibiotics or added hormones — ever
- Sustainable, pasture-based farming practices

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

By selecting "Yes" for “Keep the offcuts?” you’ll receive the smaller end pieces and trimmings that come from slicing your bulk beef — the same beef, just in uneven shapes and sizes, perfect for tallow or a super special treat for your furry friends.
