Whole Roasted Chicken Breast

Ingredients

  • 2 Whole Chicken Breasts

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp dried mixed herbs

  • Salt and cracked black pepper, to taste

  • Lemon wedges, to serve (optional)

Directions

  1. Preheat oven to 200°C (180°C fan-forced).

  2. Pat the chicken breasts dry with paper towel and place on a lined baking tray.

  3. Rub with olive oil, then season evenly with garlic powder, smoked paprika, mixed herbs, salt and pepper.

  4. Roast for 30–35 minutes, or until the internal temperature reaches 75°C in the thickest part.

  5. Rest for 5 minutes before slicing.

  6. Serve with your favourite vegetables, salad, or roast potatoes, with lemon wedges if desired.
