An unexpected great!
Got these on special and was very impressed with the meat, it was tender, juicy and had that quality rib eye fancy steak feel without the price. The thickness was perfect. I did an hour in a 130c° oven give or take (came out around 63c°) then in the pan, 2 minutes on each side to brown and crisp. most importantly is now the fat and skin. Make sure you render enough fat out while browning. Then just let them sit on the skin side for as long as you can let them. Making sure that skin crackles with all the oil floating around. I reckon I could have given it longer but the bit of crackling, the tender meat and a great pan sauce was just brilliant!
