The Porterhouse is prepared from the striploin, and is characterised as a lean but tender cut with a thin top strip of fat for extra taste. The muscles here do little work and thus yield a tender cut of meat making for a fantastic tasting and juicy steak.

Wagyu beef is best cooked to medium to let the fat render down, use a pan instead of a grill to capture the escaping fat and baste your steak in its own juices.

Wagyu is full of finely flecked intramuscular fat - this fat is full of intense flavour, and melts much closer to room temperature than regular fat. This means that less fat makes it into your waist, but all the flavour makes it onto your plate.

Wagyu fat is also full of monounsaturated fats (the same you'll find in avocado's) which helps to promote good heart health.

Wagyu strengths include:
- Outstanding beef eating quality
- High marbling, delivering beef tenderness, juiciness and flavour
- Softer fat composition: higher ratio of unsaturated fats providing a healthier beef product
- Finer meat texture

Marbling may vary from product photo.

Country of origin: produced in Australia

1824 is what you get from almost two centuries of craftsmanship and they don't throw that word around often. This is real, primal meat. Herds that've been honed for generations with proven techniques and a knowing hand to thrive on the Australian range. While times may have changed, the people who steward the land still have the same swagger and heart they've had for generations.

Northern Australia is home to their 1824 herd. Across their vast and expansive territories, spread across 15 stations in Queensland and Northern Territory, their knowledgeable cattlemen and women skilfully nurture and tend to their cattle. A meticulous artistry that is a true testament to their craftsmanship over the past 200 years.

It's their heritage, dedicated to quality beef for almost 2 centuries. It's the original branded meat. The care and passion of their people. Pride in their country, working hard, and playing hard. The home of Australian meat.

All in the pursuit of better meat. 1824. Since, well, 1824.

Wagyu Teppanaki Winner

This time of year I always invest in quality wagyu for family teppanyaki nights. With everyone gathered around the hotplate, the onion volcano makes its obligatory appearance, accompanied by my earnest (and only mildly convincing) attempts at Japanese showmanship.

I purchased the 1824 porterhouse as part of the Super Butcher Wagyu sale and it did not disappoint. The team sliced it perfectly and cryovaced it into practical batches, which made it ideal for teppanyaki service.

On the plate, it was exceptional. Truly melt-in-your-mouth, with outstanding depth of flavour—so much so that simple salt and pepper was all it needed. Soy or wasabi would have been redundant. The kids raved about it, and judging by the comsumption pace, it will all be gone within a couple of weeks.

It was a pleasure to buy wagyu of this quality at a sensible price. Well done, Super Butcher.

Super Butcher

Hi Stuart,

What an incredible review — thank you for taking the time to write it.

We love the picture you painted of family teppanyaki night (onion volcano and all!), and it’s fantastic to hear the 1824 Wagyu Porterhouse MB 3+ delivered exactly what it should: incredible flavour, tenderness and simplicity on the plate.

We’re also glad the portioning and cryovac made it easy to serve and enjoy — that’s exactly why our team packs it that way for cuts like this.

Thanks again for choosing Super Butcher and for such thoughtful feedback — we really appreciate it.

Once you select pick-up or delivery and enter the checkout, you will find the entry box on the right-hand side of our shipping details and choose your date pages (pages 1 and 2 of the checkout).

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.

By selecting "Yes" for “Keep the offcuts?” you’ll receive the smaller end pieces and trimmings that come from slicing your bulk beef — the same beef, just in uneven shapes and sizes, perfect for tallow or a super special treat for your furry friends.
