Brisket is the perfect cut for slow cooking or smoking low & slow in a smoker or charcoal BBQ. Brisket is full of beefy flavour, but as a traditionally tough cut it benefits from long sustained low temperatures to break down the collagen.

Not to mention the intense intramuscular marbling that keeps the brisket moist throughout the cook as well as adding intense flavour to the finished product.

This cut is incredibly rewarding if cooked correctly - find a recipe and get smoking!

You can view our easy to follow Brisket recipe here: How To Smoke The Perfect Brisket

Tender, juicy and with a buttery flavour that lives long in the memory, Black Opal Wagyu sits at the very pinnacle of Australian wagyu.
When you select Black Opal, there are no surprises, and this is exactly why our customers choose it - because they receive Wagyu that lives up to their expectations every time.

It’s their long-term approach to the production of Black Opal Wagyu, which begins with cattle raised on Victoria and Tasmania’s pristine pastures before spending a minimum of 380 days on grain in their dedicated feed lots.

The entire Black Opal process, from breeding to processing guarantees the consistent supply of Australia’s finest Wagyu, all year round. Each and every Black Opal product comes with guaranteed, verifiable provenance and they assure 100% quality satisfaction.

Black Opal Wagyu Beef Brisket (6kg)

I recently picked up a massive 6kg Black Opal Wagyu Beef Brisket, and it is hands-down the best meat I’ve ever worked with. If you are looking for high-end marbling and a rich, buttery flavor profile, this is the gold standard.

The Meat Quality & Prep

The marbling on this Black Opal cut was exceptional—vibrant white fat streaks throughout the deep red muscle. I chose a large piece so I could hand-cut and trim it myself, which I highly recommend if you want to control the fat cap and shape. The texture of the raw meat alone told me this was going to be something special; it was supple and clearly high-grade.

The Cook

I managed to get this 6kg beauty done in about 4 hours, and the result was spectacular. Despite the relatively fast cook for such a large brisket, the Wagyu fat rendered perfectly, keeping the meat incredibly juicy and tender.

The Verdict

Flavor: Deep, beefy, and rich. That signature "melt-in-your-mouth" Wagyu finish.

Texture: Pull-apart tender with a beautiful bark.

Overall: "Best of the best." If you're a BBQ enthusiast or just want to impress at a dinner party, this is worth every cent.

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).

If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.
