Sourced from breeding stock of Australia’s finest Wagyu cattle, these majestic cows live long, healthy lives of up to 15 years, producing beef with incredible marbling and unmatched depth of flavour. Known as the Grande Dame of old cows, this rib fillet delivers a luxurious eating experience reminiscent of Spain's renowned Vaca Vieja.

The rib fillet shines when cooked fast and hot, reaching its peak when served medium. Be sure to bring your steaks to room temperature before cooking for best results. The marbling will render beautifully, enhancing the signature Wagyu tenderness with the savoury complexity that only age can develop.
Hung using the Natural State Hanging Method, which preserves the integrity of the hindquarter cuts, this rib fillet is a true connoisseur’s cut — rich, elegant, and deeply satisfying.
Rib Fillet usually does not have any off cuts but in the rare occasion it does they will be sent to you when asked to do so.
Vintage Wagyu - These cows are breeding stock from the finest Wagyu in Australia, chosen for consistent and high quality genetics. With ages of up to fifteen years, the meat holds a spectacular depth of flavour alongside creamy marbling – The Grande Dame of old cows.
All of the meat is 100% Grass fed and certified by the third party audited Greenham Never Ever program.
Vintage Beef Wagyu is produced from wagyu beef cows that range between 9-15 years old and is said to be most similar to the Vaca Vieja (old cow) beef from the Spanish/French Basque region in flavour.
Vintage cows are hung with the Natural State Hanging Method which sees the carcases hung from the hip in their natural position and not from the Achilles thereby promoting better eating quality in the hindquarter cuts, particularly in the Striploin and the Rump.

All of our online products are vacuum sealed except for our fresh Sausages, Rissoles and Burgers, Pastries and crumbed products. Eg: Schnitzels, Chicken Kievs, Nuggets.
Our online delivery orders are packed neatly in a thick cardboard box with an insulated liner, complete with plenty of gel ice packs, all of which are recyclable*. This box can keep your order cool for up to 2 hours after delivery.
