Working directly with their dedicated farmers
across southern Australia, Pure Black starts with careful cattle selection. They know exactly where their cattle are from and how they have been bred.
Their Black Angus cattle are peacefully raised on some of the world’s best pastures and once ready, are finished with their custom barley ration.
Angus are known throughout the world for their ability to consistently produce the finest high quality beef. The superior meat quality of Angus cattle comes from their ability to lay downintra-muscular marbling (taste) during the finishing phase, together with excellent tenderness, texture, flavour, meat colour and fat colour.
Pure Black cattle are long fed a custom formulated natural barley ration, which results luxurious marbling.
Marbling has an extremely positive effect on the
eating quality of beef, in terms of tenderness, juiciness and flavour.
The hanging hook is positioned under the ligament
that runs down the back of the carcass, or under the hip-bone of the pelvis. In
this position, the legs are suspended at a 90° angle, which limits the
contraction of muscles during rigor mortis.
Angus Beef is known for its
finely marbled meat, which means that the fat is dispersed evenly against the
actual cut of meat. This marbling trait of Black Angus cattle typically
creates a more tender,
juicy and flavourful meat.
When properly processed, mixed and fed, barley is
an excellent feed grain.
