Tenderloin Straps Two Ways
Criminally underrated, as tender as eye fillet with a little trimming required. Tenderloin straps are a steal for family dinners this week.
We have shared the ingredients across these two recipes, but feel free to chop and change with what suits your palate - as tenderloin straps aren't always in stock, you can substitute these with our readily available Eye Fillet tails for less wasteage and the same great tenderness!

Ingredients
500g Tenderloin Straps or Eye Fillet Tails
1/2 Large Red Capsicum, Sliced
200g Snow Peas
1/2 Large Spanish Onion - Sliced
2 Sprigs Spring Onion - Finely Sliced
50g Bean Sprouts
2 Cloves Garlic, Finely Diced or Crushed
2 Habanero Chiles, Finely Diced (Optional)
1 Cup Hoisin Sauce
15g Pickled Ginger, Crushed
1/2 Cup Honey
1 Tsp Fish Sauce
1tsp Sesame Oil
1 Cup Soy Sauce
1/2 Spanish Onion, Sliced
100g Snow Peas, Sliced
500g Tenderloin Straps, Cubed or Eye Fillet Tails
1/2 Large Red Capsicum, Chopped
Kebab Skewers (Wooden or Metal)

Directions
Trim your tenderloin straps removing any hard fat and silver-skin (optional - this will make your bites more consistently tender). Cut into strips or cubes depending on your recipe requirements.
Stir-Fry
Bring a saucepan of salted water to the boil, place your noodles in the water for 1 minute. Strain and set aside.
Mix your sauce ingredients together, set aside in a bowl.
Bring a wok to a medium-high heat. Add your beef and sear on both sides for colour (if you aren't able to cut your beef very thin, you may need to cook a little longer to ensure it is cooked through).
Add your snow peas, capsicum and spanish onion. Cook until the snow peas begin to wilt slightly. Tossing and stirring.
Add your sauce mixture, continuing to cook for one minute or until you are happy with the cooked consistency of ingredients.
Transfer portions to a bowl, top with bean sprouts, spring onion and serve.
Kebabs
If using wooden skewers, soak for 15 minutes before beginning recipe (so they don't burn).
Season your meat with salt and pepper, or your favourite BBQ rub. We love Lanes BBQ Garlic2 for this recipe.
Bring your heat source to a medium heat (we recommend a barbecue or grill).
Start building your kebabs, we recommend adding each item evenly for a consistent flavour.
Cook on medium heat for around 3 minutes per side until the meat is cooked to your liking. Serve.
