Brisket is the perfect cut for slow cooking or smoking low & slow in a smoker or charcoal BBQ. Brisket is full of beefy flavour, but as a traditionally tough cut it benefits from long sustained low temperatures to break down the collagen.

Wagyu is full of finely flecked intramuscular fat - this fat is full of intense flavour, and melts much closer to room temperature than regular fat. This means that less fat makes it into your waist, but all the flavour makes it onto your plate.

Wagyu fat is also full of monounsaturated fats (the same you'll find in avocado's) which helps to promote good heart health.

1824 is what you get from almost two centuries of craftsmanship and they don't throw that word around often. This is real, primal meat. Herds that've been honed for generations with proven techniques and a knowing hand to thrive on the Australian range. Please note: We are more than happy to cut Briskets down to smaller portions (E.g. 2kg, 3kg, etc.) but we do not dice or slice Briskets into steaks or for Shabu Shabu.

All of our online products are vacuum sealed except for our fresh Sausages, Rissoles and Burgers, Pastries and crumbed products. Eg: Schnitzels, Chicken Kievs, Nuggets.

We offer free GPS tracked & refrigerated local delivery on orders over $200, or $19 under. Check if you’re eligible for delivery by opening the cart and using the postcode checker.

We also offer free pickup at any Super Butcher store from Tuesday to Saturday.

Our online delivery orders are packed neatly in a thick cardboard box with an insulated liner, complete with plenty of gel ice packs - all of which are soft plastics recyclable, and delivered fresh via refrigerated couriers. This box can keep your order cool for up to 4 hours after delivery.

Oh just DO IT!!!

I had the lads at Eagle Farm pack a 4.5 kilo portion of this brisket.Sat a room temperature for 24 hrs with rub then into my smoker with a mesquite chunk and water tray for an hour naked, then wrapped in commercial grade foil with crushed pinapple, more rub, maple syrup, lots of butter , onion and garlic slices and parika.

Slow cooked in my smoker for a further 10 hours! Whooaaa, melt in your mouth. The best l have EVER tried, even past anything l’ve tasted in the USA!

Once you select pick-up or delivery and enter the checkout, you will find the entry box on the right-hand side of our shipping details and choose your date pages (pages 1 and 2 of the checkout).

Our bulk beef items are advertised as they are, in bulk! This means they will hold some liquid in the bag, as genetically meat is roughly 75% water, 20% protein and 5% fat and other vitamins. These proteins mix with the liquids and extrude from meat over time (no, that's not blood in your bag).


If you are purchasing a bulk item and ask us to slice this into steaks for you, there is loss from this extrusion as well as the trim from any end cuts, large deposits of gristle or hard fats from the product.

Don't want any loss? Ask to keep the trim or for the product to be left whole so you can cut it at home.
