Excellent Biltong
I used more than half the rump making really 3 batches of really tasty biltong, the first with apple cider vinegar, the second with malt vinegar, and the third with red wine vinegar and a very drinkable shiraz. I will do that again and add toasted mustard seed to the spice mix. Currently testing a new batch of Droerwors also made with the rump. Excellent beer snack.
